Paella at home
Shrimp Shell, onion plus skin, carrot, small amount of garlic, salt, pepper
Shrimp, scallop, sea bass, cut fresh corn, asparagus, marinated red pepper, a few olives.
Morning test run using calasparra. Decent, though poorly distributed, socarrat.
Rice Casserole, not paella. I tanked this outing. Chorizo made it too oily by far, next time sautee and degrease. I used a Le Creuset pan and also, following a suggestion on LTH, ran it under the broiler. Flavor was good, I used kosher chicken, but was way too oily. No socarrat, none, zero, nada.
