Shrimp and Grits


Polenta 3/1 water milk, butter to finish.
Caramelize onions then add mushrooms, carrot, celery, garlic.
Remove from pan.
Light brine on shrimp, dust with Gary's rub, saute then add back in caramelized veg mixture.



Same basic recipe, but more rub, longer brine and more sauce. Both Ellen and I liked this version better. Next time I'll use bacon grease to cook the shrimp and crisp bacon to finish.


Bacon and asparagus added, went light on the bacon, was baconed out after Baconfest, and the asparagus was oddly flavorless, except for the very tips.
