Soft Shell Crab
(Dirk's, $5 per crab)
Soft Shell Crab Girardet
(Soft shell crabs with lime sauce)
8 soft shell crab
1/2 cup flour
1 1/2 teaspoons cajun seafood seasoning (or salt & pepper)
1/4 pound unsalted butter
zest of 1 lime
juice of 1 lime
1/4 cup water
Coat crab with flour mixed with cajun seasoning and shake off excess.
Saute in butter 4 minutes first side and 3 minutes other side. Keep warm.
Add lime rind and juice and water to pan.
Scrape brown particles in pan and incorporate in lime.
Reduce till thick. If necessary, add more water and seasoned flour. Season with salt and pepper to taste.
Pour over crabs.
