Corned beef tongue, aprox 2.5 lbs/ Lamb Neck, rubbed with mole. Both from Butcher and Larder.
Corned tongue. Smoke at 250 for three hours. Simmer one hour.
Lamb neck. Smoke at 250 for three and one half hours. Dwell in foil for an hour. Shredded, then simmer in home made salsa verde for one hour.
